Berry chia pudding is a perfect make-ahead breakfast option that is both delicious and incredibly easy to prepare. Packed with fiber and healthy fats from the chia seeds, and bursting with fresh berry flavor, it’s a nutritious and satisfying way to start your day.
For the Pudding:
In a mixing bowl or jar, combine the chia seeds, almond milk, honey or maple syrup (if using), and vanilla extract. Stir well to combine all ingredients.
Cover the bowl or jar and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency. Stir or shake the mixture occasionally during this time to prevent clumping.
If using fresh berries, wash and chop them as needed. If using frozen berries, thaw them slightly. Mash or puree half of the berries to create a compote-like texture.
Once the chia pudding has thickened, give it a good stir. Divide the pudding into serving bowls or jars.
Spoon the mashed or pureed berry compote over the chia pudding, distributing it evenly among the servings.
Top the chia pudding with the remaining whole berries and any additional toppings you desire, such as sliced almonds, shredded coconut, or a drizzle of honey.
Serve the Berry Chia Pudding immediately, or cover and refrigerate until ready to enjoy. It can be served chilled or at room temperature.
