Pulse the cauliflower florets in a food processor until a rice-like consistency is achieved. You can also grate the cauliflower by hand using the large holes of a box grater.
In a large skillet over medium heat, heat the olive oil.
Add the onion and cook until softened about 5 minutes. Add the garlic and cook for an additional minute, stirring constantly.
Add the ground sausage to the pan and break it up with a spoon while cooking until browned. Drain any excess fat.
Stir in the thyme, salt, and pepper.
Add the cauliflower rice to the pan and cook for 5-7 minutes, stirring occasionally, until softened and slightly golden brown.
Create four indentations in the hash mixture using a spoon or spatula, making sure they are large enough to hold an egg.
Carefully crack an egg into each indentation. Season with salt and pepper.
