Mozzarella, Basil & Zucchini Frittata | Recipe

This vibrant frittata bursts with fresh summer flavors, making it a perfect breakfast, brunch, or even light dinner option. Melted mozzarella cheese, sweet zucchini, and fragrant basil create a culinary symphony in every bite.

Preheat the broiler: 

Position a rack in the upper third of your oven and preheat the broiler.

Heat the oil: 

In a large broiler-safe nonstick or cast-iron skillet, heat the olive oil over medium-high heat.

Sauté the vegetables:

Add the onion and zucchini and cook, stirring frequently, until soft, about 3 to 5 minutes.

Whisk the eggs:

Meanwhile, in a bowl, whisk the eggs and pepper together until well combined.

Pour the eggs: 

Pour the egg mixture over the vegetables in the pan. Cook, lifting the edges to allow uncooked egg from the middle to flow underneath, until nearly set, about 2 minutes.

Top with cheese and tomatoes (optional): 

Arrange the mozzarella balls and sun-dried tomatoes (if using) on top of the frittata.

Broil to perfection: 

Place the skillet under the broiler and broil for 1 1/2 to 2 minutes, or until the eggs are slightly browned and the cheese is melted and bubbly.

Rest and serve: 

Let the frittata stand for 3 minutes before garnishing with fresh basil. Serve warm or at room temperature, alongside a simple salad or crusty bread.
